A high calorie cuisine

Every foodie loves to experiment in the kitchen, this is my little experiment. Hope you enjoy it.

Ingredients:
- Rice flour: 200gm approx.
- Corn/Gram flour: 2 tablespoons
- Boiled potatoes: 3 medium sized; mashed
- Processed cheese: grated; As much as you wish (alternatively cheese slice can also be used)
- Tomatoes: 2 should be more than enough; to be cut round
- Capsicum: 2 medium sized (for both flavor and aroma); cut in strings or rings fashion.
- Mushrooms: 4-5 (the white ones, that we get in market, don't really know their exact names :P); to be cut long and thin
- Pizza topping: alternatively use pumpkin sauce, but tomato ketchup is also fine.
- Cheese spread
- Ghee/Butter: Canola oil also works fine (don't use mustard oil, as it has an over powering smell)

Process:
Saute the mushrooms and capsicum in steam, till they lose excess water (non stick pan works best).
Make a dough of rice flour and potatoes adding the water sparingly. The thick dough will make a better base. Spread out the prepared dough and make a pizza base to the shape of your linking (round works for me, but some prefer it in rectangular shape). Coat this pizza base with corn/gram flour using a brush or a spoon (makes it a little less brittle). Now, bake this in your pan with some ghee/butter/oil at low flame until it's golden brown (the flame should be uniform, so oven/microwave works best, but I prepared in a pan and it turned out good). Take it out and let it cool. Now comes the time to dress it up (here, you can be as creative as you want), first comes the coating of cheese, then pizza topping (or sauce), over that add capsicum and mushrooms, with some grated cheese (or cheese slice). Do not add tomatoes yet, as they'll make it all soggy, by secreting excess water. Bake it the same way in the pan with the lid on top, at low flame until the cheese starts to melt. Take it off the flame, now add tomato slices at top, and a very light coat of cheese. Cover it up and let it cook on its own, for about 15 minutes, heat it up a bit if it seems warm and enjoy with your desired toppings.

The choice of vegetables differs for everyone, but as mushrooms go well with cheese, it makes this cuisine quite a mouth watering experience.
